Healthy Granola Bars

  • 2 1/2 c. rolled or steel cut oats (not quick oats)
  • 1/2 c. whole-wheat flour
  • 1 c. honey
  • 1/4 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/2 c. dried mixed berries, coarsly chopped
  • 1/3 c. chopped walnuts 
  • 1/2 c. water
  • 2 tsp. vanilla
  • 2 large egg whites, lightly beaten 
  • Greased 9 x 13″ pan
  • In a large bowl mix together everything but vanilla, eggs, water, and peanut butter.
  • Add beaten egg whites, vanilla, and peanut butter. Mix well.
  • Add water a little at a time until mix is just moist. 
  • press the mixture into the greased baking sheet. Bake at 350 degrees for about 20 minutes.
